BEST Vegan Key Lime Pie

Everyone that I've ever served this pie to texts me later and asks me for the recipe!

Ingredients
  

  • 1 Pre-made/bought gluten free graham cracker crust I usually use the Mi-Del Gluten Free Brand
  • 1 cup Raw cashews (soaked for 4-6 hours, or overnight then drained)
  • ¾ cup Light or full-fat coconut milk (well-shaken)
  • ¼ cup Coconut oil (melted)
  • 3-4 Large limes juiced (or equivalent of 1/2 cup of fresh lime juice)
  • 1 tbsp Lime zest
  • ⅓-½ cup Agave nectar (depending on preferred sweetness)

Method
 

  1. Add all of your filling ingredients into a blender and blend on high until creamy and smooth. Taste and adjust flavor as needed by adding more agave for sweetness or lime juice for more tart.
  2. Freeze 2-4 hours until firm (I usually make the day/night before I am planning to serve it).
  3. Take out from your freezer about 10-15 minutes to thaw before serving. Will keep sealed well in your freezer for a few weeks, though I doubt it will last that long! Ours is usually gone in a day or two!
  4. Get ready for lots of compliments!
