Light or full-fat coconut milk
Raw cashews (soaked, but if you use a Vitamix like I do, you don’t need to soak them ahead of time)
Limes
Gluten-Free Graham Cracker Crust (Homemade or my favorite brand to use is the Mi-Del brand)
You will also need a high-powered blender and a freezer where your pie will set for at least 2-4 hours!
Let’s talk about the crust for this vegan key lime pie…
I know it’s probably not very difficult to throw together a gluten-free graham cracker crust, but one of my favorite things about this recipe is how quickly and effortlessly it comes together! I have always just bought a crust (I’ve linked the kind I usually buy above). So when we are last minute invited to a barbecue, pool party or some other warm-weather event, I know just what to make and all I need to do is make sure I always have one of these crusts in my pantry! I also like to make my favorite frozen Insanely Good 10-Minute Vegan Pumpkin Pie using the same graham cracker crust!

Method
- Add all of your filling ingredients into a blender and blend on high until creamy and smooth. Taste and adjust flavor as needed by adding more agave for sweetness or lime juice for more tart.
- Freeze 2-4 hours until firm (I usually make the day/night before I am planning to serve it).
- Take out from your freezer about 10-15 minutes to thaw before serving. Will keep sealed well in your freezer for a few weeks, though I doubt it will last that long! Ours is usually gone in a day or two!
- Get ready for lots of compliments!
